Spätzle

It’s October and its Oktoberfest. For the month of Oktober, I am making foods that are of German culture – that includes Austria. My friend, Ramona had sent me a little cookbook of Austrian foods, 99 x Austrian Cooking. I love this book! I love the look and size of the book. The recipes are simple and instructions are not fussy.

I love Spätzle. I love saying it, and I enjoy making it. It’s so easy! I recebtly made a cheese Spätzle. I used the recipe in 99 x Austrian Cooking as my base; eggs, flour, a splash of milk, nutmeg, and salt to taste. I mixed in some slices of German blue cheese, which broke up with I stirred it into the dough. The dough is then pressed through a slotted spoon into boiling water. I like to follow up with frying them up with a pat of butter. It makes it slightly crispy on the outside and chewy in the middle.

To accompany the Spätzle, I made Wiener Schnitzel.
